Why choose Yangcheng Lake crabs?

As Mid-Autumn nears, crab enthusiasts zero in on hairy crabs—and connoisseurs fixate on one origin: Yangcheng Lake.

Hairy crabs, scientifically named *Eriocheir sinensis*, thrive along China’s coast from Liaoning to the Pearl River, with the Yangtze River system as the main hub. Yet, none rival those from Suzhou’s Yangcheng Lake.

The hairy crab from Yangcheng Lake is considered the best.

Yangcheng Lake is closer to the Yangtze River estuary, a large shallow grass-type lake near the crab's original breeding grounds. Its unique geographical location and natural conditions result in crabs that are superior in both size and taste.

Good water breeds good crabs. The lake's water quality fundamentally determines the crab's quality. Yangcheng Lake has clear, highly transparent water, surrounded by residential areas and ecological green spaces, free from industrial pollution.

The excellent water quality makes Yangcheng Lake the "ideal crystal palace" for hairy crabs.

Compared to other regions, Yangcheng Lake's slightly alkaline water means the crabs don’t need thick, hard shells to resist acidic corrosion. Nutrients that would otherwise go into shell growth instead enhance the meat. Just as slightly alkaline water tastes a bit sweet, the crab meat here also carries a subtle sweetness—a unique charm of Yangcheng Lake crabs.

Yangcheng Lake hairy crabs taste slightly sweet.

Additionally, over 65% of Yangcheng Lake’s bottom is hard. With an average depth of about 1.7 meters, sunlight reaches the lakebed, fostering abundant aquatic plants and plankton. The crabs enjoy daily "sunbathing" and "aerobic exercise," resulting in their distinctive "golden claws, yellow fur, green backs, white bellies, and robust bodies"—a natural anti-counterfeit mark.

From a crab-farming family with 30 years of experience.

Behind the "plump and succulent" authentic Yangcheng Lake hairy crabs lies the dedication of countless crab farmers.

Last year, our on-site inspection confirmed that from crab selection to logistics, they met our stringent standards. This year, we’re sticking with them!

Our selected crabs come from the core area of Yangcheng Lake, raised by a local team with 30 years of experience. The leader, Old Pan, grew up learning crab farming from his father. After retiring as village head, he took over the family business, refining organic farming techniques and expanding operations. Today, he manages 150 acres, yielding about 20 tons annually.

When the autumn wind rises, the crabs grow restless—Yangcheng Lake hairy crabs can’t wait to "escape."

During last year’s visit, Old Pan explained that prolonged high temperatures and droughts in the south pose a severe challenge during the crabs’ molting period. Heat reduces their appetite and can even cause fatal oxygen deprivation. His team countered this with underwater oxygenation, replanting aquatic grass, and nutrient-rich feed, ensuring size and quality despite higher costs.

Feeding fish provides better nutrition for the crabs.

Living well and eating better, Yangcheng Lake crabs enjoy a carefully crafted daily diet of chilled fish, shrimp, snails, and corn—no artificial feed or additives. Raised for 18 months from hatchlings to adulthood, they develop a tender, rich flavor.

The farmers’ daily feeding also attracts birds looking for a snack.

To ensure customers receive live crabs, each one undergoes rigorous screening after harvest. Dead, disabled, or weak crabs are discarded. Only the most vigorous are weighed, sorted, and placed in temporary tanks to purge sand.

Harvested crabs are strictly sorted by size.

After a night in temporary tanks, the lively crabs are packed at dawn. Each bears an "anti-fake ring" for authentication. Packed in foam boxes with insulated bags and ice packs, they arrive safely.

Yangcheng Lake hairy crabs with their own "ID card."
One crab, one code—verifiable on the official website with full traceability.

How to ensure you’re buying genuine Yangcheng Lake hairy crabs and not counterfeit products? This is a top concern for every hairy crab lover.

Beyond visual identification, the key is to look for the anti-counterfeiting label issued by the Suzhou Yangcheng Lake Hairy Crab Industry Association. The one-crab-one-code anti-counterfeiting label serves as the crab’s ID. Consumers can verify authenticity by scanning the code or entering the password on the association’s official website.

The Suzhou Yangcheng Lake Hairy Crab Industry Association, as the sole holder of the geographical indication for Yangcheng Lake hairy crabs, is the only authority qualified to authorize eligible operators to use the geographical indication and issue officially recognized anti-counterfeiting labels—commonly known as "anti-counterfeiting rings."

The number and distribution timing of "anti-counterfeiting rings" are strictly controlled—only 600 rings per acre, issued annually on the opening day of the harvest season.
